Mediterranean Berry Protein Bowl with Honey-Toasted Granola
High-protein Greek yogurt breakfast bowl with fresh berries, crunchy granola, and chia seeds.
A protein-forward breakfast bowl featuring velvety Greek yogurt layered with jewel-toned berries, a buttery honey-almond granola, and a sprinkling of omega-rich chia seeds.
Ingredients
Serves 2
- 150g nonfat Greek yogurt per bowl
- 80g mixed berries (blueberries, raspberries, blackberries)
- 50g homemade honey-almond granola
- 20g sliced almonds
- 10g chia seeds
- Drizzle of honey
- Lemon zest and vanilla for brightness
Method
-
Step 1: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Combine oats, sliced almonds, a pinch of sea salt, and lemon zest in a bowl.
-
Step 2: Drizzle olive oil and honey over the oat mixture. Toss thoroughly to coat each oat flake. Spread in a single layer on the prepared baking sheet.
-
Step 3: Bake for 12-15 minutes, stirring halfway, until the granola turns golden and the almonds emit a fragrant, nutty aroma. Remove and let cool completely—it will crisp as it cools.
-
Step 4: While granola cools, portion Greek yogurt into two bowls. Smooth the surface with the back of a spoon for an even base.
-
Step 5: Arrange mixed berries in a neat cluster over the yogurt. The colors should contrast—deep blue blueberries, ruby raspberries, and inky blackberries.
-
Step 6: Sprinkle 25g of the cooled granola over each bowl. Add chia seeds in a small mound for texture and visual interest.
-
Step 7: Finish with a light drizzle of honey and an extra scatter of almonds. Serve immediately.
