Golden Chickpea & Herbed Couscous Bowls

- 200g chickpeas (drained)
- 1 tsp olive oil
- 1/2 tsp cumin, 1/4 tsp smoked paprika, 1/4 tsp sea salt
- 150g whole wheat couscous
- 1/2 tsp sea salt and 1 tsp olive oil for couscous
- 2 tbsp chopped parsley
- 1/2 cucumber, diced
- 150g cherry tomatoes, halved
- 200g mixed salad greens
- 3 tbsp tahini
- 2 tbsp lemon juice
- 1 small garlic clove
- 30-45ml cold water

Preheat a skillet over medium-high heat. Add the drained chickpeas, olive oil, cumin, smoked paprika, and salt. Toast for 4-5 minutes, stirring occasionally, until the chickpeas are golden and slightly crispy at the edges. Remove from heat and set aside.

Bring 300ml water to a rolling boil in a medium saucepan with 1/2 teaspoon salt. Add the couscous, stir once, then immediately cover with a tight-fitting lid and remove from heat. Steam for exactly 5 minutes—don't lift the lid. After 5 minutes, uncover and fluff with a fork. Drizzle with olive oil and fold in the chopped parsley. The grains should be tender with a slight bite.

Make the tahini dressing: In a small bowl, whisk together the tahini, lemon juice, grated garlic, and cumin until smooth. Add cold water one tablespoon at a time, whisking vigorously, until you reach a pourable consistency like heavy cream. Season with salt and pepper. The sauce should coat a spoon thickly but drizzle easily.

Build each bowl: Place 100g salad greens as the base, then add a generous scoop of herbed couscous. Arrange the toasted chickpeas, diced cucumber, and halved tomatoes in sections on top. Drizzle with 2 tablespoons of tahini dressing and serve immediately, passing extra dressing at the table.
