One-Pot Parmesan Chicken with White Beans

The kind of weeknight dinner that makes you feel like a kitchen genius. Everything โ€” chicken, beans, onions, garlic, stock and spinach โ€” cooks in a single pot. Ingredients

Serves 2

  • 2 chicken breasts (300g), diced into 2cm cubes
  • 1 can (400g) cannellini beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 200g baby spinach
  • 50g grated parmesan (plus extra to serve)
  • 2 tbsp olive oil
  • 500ml chicken stock
  • 1 tsp dried basil
  • Salt and freshly ground black pepper

Method

  1. Heat the olive oil in a large, deep frying pan or Dutch oven over medium heat. Add the onion and cook for 4 minutes until softened. Stir in the garlic and cook for another minute.

  2. Add the diced chicken and cook for 5 minutes, stirring occasionally, until lightly golden on all sides.

  3. Pour in the chicken stock, add the cannellini beans, basil, salt and pepper. Bring to a simmer and cook for 10 minutes until the chicken is cooked through and the broth has reduced slightly.

  4. Add the spinach in handfuls, stirring until wilted โ€” this should take 1-2 minutes. Remove from the heat.

  5. Stir in the grated parmesan until melted. Taste and adjust seasoning. Serve in shallow bowls with extra parmesan over the top.
