One-Pot Parmesan Chicken with White Beans
A 30-minute one-pot dinner with chicken, cannellini beans, spinach and parmesan.

Ingredients

- 2 chicken breasts (300g), diced into 2cm cubes
- 1 can (400g) cannellini beans, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 200g baby spinach
- 50g grated parmesan (plus extra to serve)
- 2 tbsp olive oil
- 500ml chicken stock
- 1 tsp dried basil
- Salt and freshly ground black pepper

Heat the olive oil in a large, deep frying pan or Dutch oven over medium heat. Add the onion and cook for 4 minutes until softened. Stir in the garlic and cook for another minute.

Add the diced chicken and cook for 5 minutes, stirring occasionally, until lightly golden on all sides.

Pour in the chicken stock, add the cannellini beans, basil, salt and pepper. Bring to a simmer and cook for 10 minutes until the chicken is cooked through and the broth has reduced slightly.

Add the spinach in handfuls, stirring until wilted โ this should take 1-2 minutes. Remove from the heat.

Stir in the grated parmesan until melted. Taste and adjust seasoning. Serve in shallow bowls with extra parmesan over the top.
