Garlic Chicken & Broccoli Stir-Fry
A 20-minute weeknight stir-fry with chicken, broccoli, and ginger.
When you need dinner on the table in 20 minutes, this stir-fry is the answer. Chicken and broccoli get a hit of garlic, ginger and soy sauce, with a cornstarch coating that gives the chicken that satisfying crisp-soft contrast. The whole dish comes in at 480 kcal with a generous 38g of protein per serving.
Ingredients

- 2 chicken breasts (300g), diced into 2cm cubes
- 300g broccoli florets
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tbsp cornstarch
- 2 spring onions, sliced

Toss the diced chicken with the cornstarch and 1 tablespoon of the soy sauce. Let it sit for 5 minutes while you prep the vegetables.

Heat the olive oil in a wok or large frying pan over high heat. Add the chicken in a single layer and sear for 3-4 minutes, turning, until golden on all sides and almost cooked through. Remove to a plate.

Add the broccoli to the pan with a splash of water. Stir-fry for 2-3 minutes until bright green and just tender. Add the garlic and ginger and stir for 30 seconds until fragrant.

Return the chicken to the pan with the remaining soy sauce. Toss everything together for 1 minute to coat and heat through. Drizzle with the sesame oil and scatter the spring onions over the top.
