  • 120g orzo pasta
  • 1.2L low-sodium chicken stock
  • 3 large eggs
  • 2 tbsp fresh lemon juice
  • 1 medium lemon, zested
  • 100g carrots, diced
  • 100g celery, diced
  • 1/2 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 2 tbsp fresh dill, chopped
  • Salt and white pepper to taste

Method

  1. Step 1: Pat chicken breast dry with paper towels. Slice against the grain into 1/4-inch thick pieces. Season lightly with salt and set aside. This ensures even cooking and better texture.
